This is a great carrot cake recipe that is very simple to prepare. Recipe also includes frosting.

Ingredients For russ's carrot cake

  • 2 C. flour, sifted
  • 1 tsp. salt
  • 2 tsp. baking soda
  • 2 tsp. cinnamon
  • 1 1/2 C. salad oil
  • 3 C. carrots, grated
  • 2 C. sugar
  • 4 eggs, at room temperature
  • 1 tsp. vanilla
  • 1 can or pkg. Angel flake coconut
  • 1/4 C. pecans
  • 1 C. dates, cut up
  • Frosting:
  • 1/2 C. butter, at room temperature
  • one 8-oz. pkg. cream cheese, at room temperature
  • 1 tsp. vanilla
  • 2 1/2 C. powdered sugar

How To Make russ's carrot cake

  • 1
    Sift flour, salt, soda, and cinnamon. Pour oil in mixing bowl. Add sugar and beat well. Add 1 egg at a time and beat well. Blend vanilla and sifted dry ingredients. Blend in remaining ingredients. Pour into greased 9x13-inch pan and bake at 350 degrees for 1 hour. Watch cake. Frost cake. For frosting: Cream together butter and cream cheese. Add vanilla and powdered sugar. Blend and beat until light and fluffy.
