It’s said that Aesclepius, God of Medicine, gave mustard to man. He intended that the plant be used medicinally, but man soon learned how delicious the greens were if gathered young and cooked like spinach

Ingredients For mustard greens

  • 2 Lbs Mustard greens
  • 1/2 C Boiling water
  • 3/4 tsp Salt
  • Pinch Pepper
  • 2 Tbs Bacon drippings (or melted butter)

How To Make mustard greens

    Pick over greens, carefully, removing any roots, woody stems, or blemished leaves. Wash 2 -3 times in cool water to remove all grit and sand.Break leaves into bite sized pieces or chop fine. Place in a large pot, add water and salt, cover, and simmer until tender: 10 -15 minutes. Drain, add pepper and drippings and toss to mix.
