stuffed roasted poblano peppers

This is my FAVORITE recipe as I LOVE roasted peppers! They smell amazing and roasting them just brings out their smoky, peppery flavors. My family likes these as well - if you feel like you are in a rut with your cooking this is an easy and tasty change up!!!

Ingredients For stuffed roasted poblano peppers

  • 4 lg
    poblano peppers
  • 1 lb
    ground turkey sausage
  • 1 c
    rice, cooked to pkg. directions
  • 1 can
    diced tomatoes, drained
  • 1 sm
    onion, diced
  • 1 pkg
    your favorite grated cheese
  • 1 tsp
    italian seasoning
  • 1 Tbsp
    garlic, minced
  • salt and pepper to taste

How To Make stuffed roasted poblano peppers

    Place poblanos on your grill and get a nice char on them. Then immediately put them in a glass container and cover with saran wrap and let them sweat for a few minutes.

    While your peppers are sweating. Brown your turkey sausage (you can use pork or any other kind of meat you like but to me the star is the peppers so I like to use the turkey)so while you are browning your turkey add your onion in with it as it browns and then add your garlic toward the end of the browning so you don't over cook it (if you are using a fatty sausage this is the point you would drain it) then add your italian seasoning and your tomatoes. (If there is alot of juice from the tomatoes you can drain it off or let it cook off. You don't want alot of juice in your stuffing.) Taste it and see if you want to add any salt and pepper at this point. Then add your cooked rice and mix in well.

    Take your peppers out and peel the charred skins off of them make a slit down 1 side and remove seeds. Then stuff peppers with sausage mixture and then top with a handful of cheese. Wrap in foil and put back on grill and let it cook til cheese melts and it is heated through. (This won't take long as everything should be pretty warm already) Remove from grill and serve. You can also serve it with sour cream and/or picante sauce if you like the extra toppings! My husband likes it on his! Enjoy!(=
