Here's a South Western twist of the traditional Shepherd's Pie.

Ingredients For south western shepherd's pie

  • 1 lb
    ground turkey
  • 1 md
    quantity of mashed potatoes
  • 1/2 c
    hatch chilies
  • 1/2 c
    scallions -- chopped
  • 1 Tbsp
    mccormick southwest seasoning
  • 15 oz
    can of fire roasted tomatoes
  • 15 oz
    can of mixed veggies
  • 1 (16 oz)
    bag pepper jack cheese

How To Make south western shepherd's pie

    Brown beef, scallions, chilies, and season with Southwest Seasoning in a large nonstick skillet over medium-high heat, stirring often, 10 minutes or until meat is browned.

    Transfer meat to a casserole dish.

    Then add mixed vegetables & fire roasted tomatoes on top of the meat.

    Layer the mashed potatoes over top of vegetables.

    Cook in 375 Degree Oven until the potatoes are almost browned and then add Cheese and let it cook for a bit longer until cheese is melted.
