Mexican food is a family favorite so I'm always trying to come up with new Tex-Mex ideas. Just using what I had on hand resulted in this casserole. It was super simple to make and everybody loved it.

Ingredients For fiesta corn casserole

  • 1 lb
    turkey breakfast sausage, browned
  • 1 1/2 c
    elbow macaroni, uncooked
  • 1 can
    (15.25 oz) fiesta corn, undrained
  • 1
    onion, (optional)
  • 1 can
    (14.5 oz) petite diced tomatoes, undrained
  • 2 c
    salsa
  • 2 c
    white tortilla chips, crushed
  • 2 c
    cheese, cheddar and pepper jack

How To Make fiesta corn casserole

    After browning turkey sausage, drain any excess grease if necessary. In a 13"x9" casserole dish, layer ingredients beginning with uncooked elbow noodles. Next add sausage, then corn and onion.

    Stir together tomatoes and salsa. Pour over other ingredients in the pan.

    Cover and bake at 350 degrees for 50 minutes.

    Remove from oven. Uncover and sprinkle tortilla chips over casserole. Cover chips with cheese. Return to oven and bake uncovered for an additional 5 to 10 minutes.

    Note: A four cheese mexican blend would be good in this casserole also.
