Ingredients For winter squash chili

  • 1 lg
    onion, chopped
  • 1
    green pepper, chopped
  • 1
    sweet yellow pepper, chopped
  • 1 Tbsp
    olive oil
  • 4 clove
    garlic, minced
  • 1 lb
    ground saussage
  • 1 lb
    winter squash, peeled, seeded, chopped
  • 1 can
    (14-1/2 oz.) diced tomatoes, undrained
  • 4-1/2 tsp
    chili powder
  • 1/4 tsp
    salt
  • 1/4 tsp
    pepper
  • for toppings: shredded cheese, chopped green onion, sour cream

How To Make winter squash chili

  • 1
    Saute onion and peppers in oil until tender. Add garlic and cook one more minute.

    Crumble saussage into onion mixture and cook until no longer pink.

    Transfer to a slow cooker. Stir in winter squash, tomatoes, chili powder, salt, and pepper. Cover and cook on low for 7 to 9 hours.

    Serve with toppings of choice.
