I like combining two or three different meats when making meatballs or meat loaf and this recipe has two kinds of ground meat.

Ingredients For turkey meatloaf

  • 2 lg
    garlic cloves
  • 2 c
    white or cremeni mushrooms, stems removed
  • 1 sm
    zucchini cut in chunks
  • 1 lg
    onion cut in quarters
  • 1/2 lb
    ground turkey
  • 1/2 lb
    ground pork
  • 2 sm
    sslices italian bread torn into small pieces
  • 1 c
    tomato sauce
  • 1 Tbsp
    chopped fresh basil
  • 1
    egg white
  • salt and pepper to taste

How To Make turkey meatloaf

    Preheat oven to 375F, spray 8 1/2 x 4 loaf pan with cooking spray. In food processor with motor running drop garlic into container until finely chopped, turn off motor and drop the onion, zucchini, mushrooms and basil process until finely chopped...DO NOT PUREE.

    Transfer vegetables to large bowl add meat, bread and 1/2 of the tomato sauce, mix until well combined. Transfer meat mixture to prepared pan spread until smooth and top with the other 1/2 of the tomato sauce.

    Bake for 45 to 50 minutes pour off any fat and discard..To serve place 3 or 4 lettuce leaves on platter and place meatloaf on the leaves...let sit for 5 minutes and slice..great served with mashed taters and tossed salad.
