This is a recipe I stared years ago, I was being a rump to my Hubby one day because he had me so mad LOL. I fried breaded chops and had made a salad and he made some smart mouth comment so I just dumped it all on top of his chops and tossed it on the table. Needless to say he LOVED it (just my luck lol) I did refine the recipe from "Here's your Slop" (hubby's name for it) to Stacked Pork Chops. And did revise the recipe to be more of a meal and not a hubby slam lol. Hope you like it and it is GREAT made with Chicken as well! I make both when I make it my daughter will only eat chicken.

Ingredients For stacked pork chops

  • FRIED PORK RIBEYES (CUTLETS)
  • 4
    pork ribeye (cutlets) or any boneless chop you prefer)
  • 1/2 c
    buttermilk
  • 2 c
    panko bread crumbs
  • 1/2 c
    flour
  • 1/2 tsp
    thyme (optional)
  • 1 tsp
    pepper
  • 1 tsp
    salt
  • oil for frying
  • SALAD OF YOUR CHOICE

How To Make stacked pork chops

    Using a meat mallet flatten pork or chicken breast until it is 1/4 inch thick.

    Lay flat in shallow dish (I use a casserole dish) pour buttermilk over pork or chicken.

    In another casserole dish mix panko, flour, thyme, salt and pepper.

    Bread one piece of pork or chicken at a time and lay flat on a plate.

    In a large skillet or deep fryer heat at least 2 inches of oil.

    Once oil is hot (350 degree) add one piece of meat and cook for 2-3 minutes and turn over. Brown both sides of meat until golden (this cooks fast due to the thinness of the meat)

    Remove from oil to paper towel lined plate and then to wire rack if you want.

    Once all meat is fried plate and top with your favorite salad and dressing.

    We use homemade Ranch and homemade Blue Cheese and I serve with my homemade Twisty Sista' bread sticks

    This is nice fast meal that is light but will stick to your ribs. It is also a great leftover dish! Makes a awesome sandwich the next day!
