Boneless pork loin roast makes for a quicker smoked pork roast.....not as tasty in my opinion as bone in pork butt but definitely worth the effort! Bone in pork butt takes about 8 hours....this is ready in under 2 hours...not including the time the rub sits on the roast.

Ingredients For smoked paprika pork roast with sticky stout barbec

  • 2 Tbsp
    smoked paprika
  • 2 Tbsp
    brown sugar
  • 1 Tbsp
    kosher salt
  • 1 clove
    garlic, pressed
  • 1 tsp
    coarsely ground pepper
  • 4 tsp
    fresh thyme, chopped, divided
  • 3 1/2-4 lb
    boneless pork loin roast
  • kitchen string
  • STICKY STOUT BARBECUE SAUCE
  • 1 sm
    onion, finely chopped
  • 1 Tbsp
    vegetable oil
  • 2 clove
    garlic, minced
  • 11.2 oz
    stout beer
  • 1 c
    spicy barbecue sauce
  • 1/4 c
    fig preserves
  • 2 Tbsp
    apple cider vinegar

How To Make smoked paprika pork roast with sticky stout barbec

    Stir together the first 5 ingredients and 2 teaspoons thyme. Trim the pork roast. Rub paprika mixture over the pork. Tie the roast with kitchen string at 1 1/2 inch intervals, and place in a 13 x 9 x 2 inch baking dish. Chill, uncovered, 24 hours.

    Light one side of the grill, heating to 350° to 400° (medium-high heat); leave other side unlit. Place the pork over the lit side, and grill covered with lid, 8 minutes on each side or until browned. Transfer the pork to the unlit side, and grill, covered with lid for 35 to 45 minutes or until a meat thermometer inserted in the thickest portion registers 145°. Let stand 10 minutes. Brush with Sticky Stout Barbecue Sauce. Sprinkle with the remaining 2 teaspoons thyme. Serve with the remaining sauce.

    For the sauce: Saute the onion in hot oil in a large saucepan over medium-high heat 4 to 5 minutes or until tender. Add garlic; saute 1 minute. Gradually stir in beer. Cook 8 to 10 minutes or until mixture is reduced by half. Reduce heat to medium.

    Stir in barbecue sauce and the next 2 ingredients, and cook 4 to 5 minutes or until thoroughly heated.
