I also learned this in home economics back in the mid 80's. it was so good i kept it. I thought it was weird to use breakfast sausage but oh the flavor of it in this dish is exciting on the taste buds.

Ingredients For sausage and rice casserole

2 lbground breakfast sausage (jimmy dean or owens or store brand)

1 mdonion chopped

2 sprigcelery sliced medium to thin (i like some bigger pieces of celery for texture)

2 cancream of mushroom soup
-
2 cancream of celery soup
-
1 cmilk
-
5-6 cups cooked white rice
-
salt and pepper to taste

velveeta cheese
How To Make sausage and rice casserole

1In a Dutch oven cook sausage with onions and celery breaking sausage up to a fine ground texture.

2add cream of soups and salt and pepper. add your rice. spread into a 9x13 casserole dish, top with velveeta slices. melt in oven 350. so yummy. my kids love it!
