1/4 cprepared mustard

1bay leaf

1/4 conion, chopped

4 ctomatoes, chopped

1/4 tsppepper

1 tspdried thyme leaves

1 tspdried oregano leaves

1 tspsalt

1 Tbspred chiles, ground

1/4 ctequila

1/4 clime juice

1/4 ccelery, chopped

1/4 ccarrot, chopped

2cloves garlic, cut in half

1/4 cvegetable oil

2 lbpork tenderloin

1/4 csnipped fresh parsley
How To Make pork tenderloin in tequila

1Spread mustard over the pork tenderloin.

2Heat oil and garlic in a 10-inch skillet until hot.

3Cook pork in oil over medium heat until brown.

4Remove garlic.

5Stir in remaining ingredients except the parsley.

6Heat to boiling then reduce the heat.

7Cover and simmer until pork is done, about 30 minutes.

8Remove the bay leaf and sprinkle with the parsley.
