Ingredients For pork tenderloin and red onion compote

  • 1 lb
    pork tenderloin {about one large}
  • 2 t Tbsp
    butter, cold
  • 1 lg
    red onion halved lengthwise and thinly sliced crosswise
  • 1 tsp
    fresh chopped cilantro
  • 1 Tbsp
    flour
  • 1 c
    milk
  • 2 Tbsp
    cider vinegar
  • 2 Tbsp
    pure maple syrup or honey
  • 2 Tbsp
    chopped fresh parsley

How To Make pork tenderloin and red onion compote

    Preheat oven to 400F with sharp knife strip off the thin silvery skin and any fat..then cut tenderloin into 1/2 inch slices..Heat a large skillet over medium_high heat..add butter and swirl pan to spread butter add sliced pork to hot pan and sear on both sides about 2 or 3 minutes per side, or until golden.

    Transfer pork to a rimmed baking sheet and roast in oven for 10 minutes or until just a hint of pink remains inside. Remove from oven tent with foil and rest for 5 minutes.

    Add onions to skillet and saute for 2 minutes until softened.reduce heat to medium low and cook stirring for 8 minutes or until onions are very soft and lightly browned.. whisk flour into milk and gradually add to skillet, simmer and stir for 3 minutes or until thickened stir in vinegar and syrup...spoon onions onto plate, top with pork and sprinkle with parsley and cilantro.
