This a combination of sweet and spicey and I like to combine meat with fruits..great served with fried rice.

Ingredients For pork tenderloin and apricots

4 tspolive oil

1 cdiced red onion
-
1/2 cdiced red pepper

1/2 cdiced green pepper

6dried apricots finely chopped

1/2 cdry seasoned bread crumbs

1 lbpork tenderloin
-
1 Tbspdijon mustard
-
2 Tbspliquid honey
-
1 mdpeeled and chopped apple

pinch red pepper flakes

2 Tbspchopped parsley
How To Make pork tenderloin and apricots

1In large skillet heat oil and cook onion and peppers until softened about 4 minutes, add apricots, apple, crumbs, hot pepper flakes and parsley and stir in 2 tbsp water and cook for 3 to 4 minutes.

2Cut the pork in half horizontally, almost but all the way through. Open it up and pound with meat pounder to evenly flatten. Mound the stuffing lengthwise into the pork and secure with butcher twine.

3Heat the oil in skillet and sear the meat on all sides about 6 to 7 minutes to brown. place into casserole or roasting pan and bake 15 to 20 minutes or til juices run clear when pierced with a knife. Remove pork to platter whisk honey and mustard and brush the pork all over and slice to serve.
