5 lbpork loin

2carrots, peeled and sliced

How To Make mexican pork roast cooked in beer

1Heat oil in small skillet; saute onion and garlic until limp.

2Drain tomatillos; reserve liquid.

3Combine tomatillos, 1/2 cup reserved liquid, onion, garlic, oil, oregano and cilantro in jar of electric blender; puree.

4Heat skillet over moderate heat.

5Pour in sauce; cook 10 minutes.

6Remove from heat; add wine, vinegar, salt and pepper.

7Chill sauce; serve with pork.
