My husband and his Jersey friends taught me about this combination of ingredients There once was a place along the Boardwalk that serves this up on Italian Rolls and they call it Boardwalk Sausage. To create the sandwich simply leave sausages whole and do not mix the potatoes with other ingredients. Place a sausage in an Italian roll and top with your choice of vegetables, potatoes and condiments

Ingredients For italian sausage and peppers with potatoes

  • cooking oil
  • 8 md
    potatoes
  • 5 - 6
    italian sausages
  • 1 c
    thinly sliced red onion
  • 1
    whole red pepper
  • 1
    whole green pepper
  • salt & pepper to taste
  • 4-6
    italian bread rolls (optional)

How To Make italian sausage and peppers with potatoes

  • Potatoes  can be prepared a day ahead and kept in the refrigerator

    Boil potatoes skins on until a fork comes out easily. Pour into a large strainer. Fill cook pot with ice and place strainer over the chilled pot to cool. When potatoes are cooked dice into bite sized pieces

    Fry diced potatoes in two separate batches a skillet of hot oil. Make sure to use enough oil to get the potatoes good and brown. Add desired amount of salt and pepper. Turn as necessary to prevent scorching or sticking

    Meanwhile cook sausages in another skillet, cover and cook over medium heat. Turn occasionally and add just enough water to keep them from scorching Lower heat and simmer until cooked through

    While potatoes and sausages are cooking cut peppers into thin strips and thinly slice onion

    When sausages are done remove from pan using tongs and place on a cutting board. Slice sausages diagonally into 1/2” slices. Return sausages to skillet and add a little oil if necessary to keep them from sticking. Using tongues move sausages to a cutting board. and slice diagonally into bite size pieces approximately 1/2” thick

    Add potatoes to sausages and stir in onion slices. salt and pepper to taste

    Cook until onions are heated then add peppers. Mix all ingredients and cook just a few minutes until vegetables soften to desired tenderness

    Season with salt and pepper according to taste

    Serve as is or add Ketchup and mustard
