I love sub sandwiches, this is so easy to make and is a meal to it's self. This is a good way to get kids to eat vegetables like bell peppers, and onions. Who can resist?

Ingredients For italian sausage and pepper sub sandwich

  • 3 lb
    italian sausage, mild cut into 3/4 " slices
  • 4
    medim green peppers, cut into strips
  • 1
    medim onion cut into strips
  • 2 Tbsp
    olive oil
  • 4 Tbsp
    beef broth
  • 4
    plum tomatoes chopped
  • 2 Tbsp
    minced parsley
  • 2 c
    shreded mozzarella cheese
  • 4-6
    submarine sandwich rolls
  • salt and peppers to taste

How To Make italian sausage and pepper sub sandwich

    In a large skillet , cook the sausage over mediun heat until no longer pink. Add all the remaining ingredients except the mozzarella cheese and rolls.

    Cover and cook ao low to medium heat for 30 minutes or until vegetables are tender, stirring occasionally.

    When ready to serve place on toasted sub rolls with mozzarella cheese on top.
