The secret to grilling pork chops is to use medium-low heat so they remain juicy. Adobo marinade is a fragrant paste of garlic, herbs, cumin and sour citrus juice that is used extensively in Latin America and Cuba. The sauce goes well with chicken, too.

Ingredients For grilled pork chops in adobo

  • 1 tsp
    chopped garlic
  • 1/4 c
    lime juice
  • 1 tsp
    ground cumin
  • 1 tsp
    chopped fresh oregano (or 1/4 tsp dried)
  • 1 tsp
    paprika
  • 2 Tbsp
    olive oil
  • salt and freshly ground pepper, to taste

    rib or loin chops, 1 inch thick

How To Make grilled pork chops in adobo

  • 1
    Combine garlic, lime juice, cumin, oregano, paprika, olive oil, salt and pepper.

    Pour over pork chops and marinate for 1 hour at room temperature or refrigerate overnight.

    Grill pork chops on medium-low heat for 4 minutes. Turn chops and grill for 4 minutes. Turn and repeat, grilling for 14 to 16 minutes in total, until just cooked.
