Kicked up baked beans made in the crockpot. Very easy to make and take along for a BBQ.

Ingredients For cowboy beans

  • 1 c
    salsa (however hot you like)
  • 2/3 c
    barbecue sauce
  • 1
    onion, diced & sauted
  • 2 can
    pork & beans (28 oz)
  • 1 can
    chili beans
  • 1 can
    black beans (drained & rinsed)
  • 1 lb
    kielbasa, sliced and browned
  • 1/2 lb
    bacon (diced, cooked & drained)
  • 1 sm
    jalapeno pepper, seeded & diced very fine
  • 2/3 c
    brown sugar

How To Make cowboy beans

  • 1
    Slice bacon into small pieces, brown in a skillet and drain fat. I reserve some of the bacon fat and use it to saute the onions and brown the kielbasa in.

    Brown kielbasa in skillet with small amount of bacon fat. Drain on paper towel and set aside. Saute the diced onion in a about a tablespoon of bacon fat until soft. Drain on paper towel and set aside.

    Add all ingredients to crock-pot and stir to combine. Cook on low for about 6 hours or until they have thickened.

    Add as much or as little of the jalapeno as you like, or eliminate altogether if not a fan of spicy food.
