I love pizza, lasagna, calzone's and everything Italian. I have looked at different recipe's and decided to do my own since I want something more then just the meat, cheese and mushroom calzone. I will warn you that this is time consuming but well worth it and will also feed an army. You can half the recipe, I just love to make more so I can share with friends and family. Hope you enjoy!

Ingredients For combination calzone

  • SICILIAN DOUGH
  • 1 1/2 c
    warm water
  • 1/2 c
    olive oil
  • 5 c
    all purpose flour
  • 1 tsp
    salt
  • 2 tsp
    yeast
  • FILLING
  • 1 1/2 lb
    italian pork sausage (beef or turkey can be substituted)
  • 1 c
    mixed bell peppers, diced
  • 1/2
    onion, diced
  • 1 c
    eggplant, diced
  • 1
    yellow crooked neck squash, diced
  • 1/2 c
    carrot, shredded
  • 1 c
    parsnip, shredded
  • 1/2 c
    kale, chopped (spinach can be substituted)
  • 2 c
    crimini mushrooms, chopped
  • 2 c
    grape tomato's, halved
  • 1/2 c
    pepperoni, diced
  • 1 Tbsp
    red pepper flakes
  • 1 tsp
    garlic powder
  • 1 Tbsp
    basil
  • 1/2 Tbsp
    oregano
  • CHEESE LAYER IN FILLING
  • 16 oz
    ricotta cheese
  • 1/2 c
    parmesan cheese
  • 1 c
    mozzarella cheese
  • SAUCE
  • 2 jar
    marinara sauce

How To Make combination calzone

    Start dough, I use my bread machine and this is why this recipe is time consuming. Make sure you use the dough setting. If you want you can use a premade dough from your grocery store.

    Brown meat, drain and put in a large enough mixing bowl to hold all the ingredients for the filling.

    Saute to just tender: bell peppers, onion, eggplant, squash, carrot and parsnip. Once done add to mixing bowl with the meat.

    Add the rest of the ingredients for the filling to the bowl and mix together.

    In a separate bowl mix together the cheese layer.

    Once dough is done cut into 4 equal parts and roll each one out to a medium sized pizza round. Take 1/4 of your cheese layer and spread on half of the pizza and then pile on the meat/vegetable mix. Using one of the jars of Marinara sauce, spoon 4-5 spoonfuls over top and then carefully stretch the dough over and crimp edges.

    Place on a greased baking sheet, pizza pan or stone. Whatever you prefer. Let rise in a warm place for 20-25 minutes.

    Bake at 400 for 25 minutes.

    Heat your marinara sauce in a sauce pan and serve over the top with Parmesan cheese.
