Ingredients For grown up mac and cheese

  • 12 oz. turkey bacon
  • 1 t. vegetable oil
  • salt to taste
  • 16 oz. uncooked macaroni
  • 4 cups milk
  • 6 t. butter
  • 1/2 cup flour
  • 3 cups grated gruyere cheese
  • 2 1/2 cups shredded extra sharp cheddar cheese
  • 1 cup crumbled blue cheese, 4 oz
  • 1 t. salt
  • 1/2 t. freshly ground pepper
  • 4 slices white sandwich bread, crusts trimmed
  • 2 t. butter, melted
  • 1/4 cup chopped fresh basil

How To Make grown up mac and cheese

    Arrange bacon slices on a baking sheet and bake at 400 for 15 to 20 minutes or until crisp. Drain and crumble coarsely. Reduce oven temperature to 375. Bring large pan of water to a boil. Add oil and season with salt. Add pasta and cook for 6 to8 minutes or until al dente; drain. Bring milk just to a simmer in a pan and maintain at a simmer; do not boil. Melt 6 T. butter in large pan. Whisk in flour. Cook for 2 minutes, whisking constantly. Add hot milk and cook for 3 minutes or until thickened, whisking constantly. Remove sauce from heat. Add Gruyere cheese, cheddar cheese, blue cheese, 1 T. salt and the pepper. Stir until cheeses are melted and blended. Add the pasta and stir in the bacon. Spoon into six individual gratin dishes and place on two baking sheets. Process bread to coarse crumbs in food processor. Mix with 2 T. melted butter and the basil in a bowl. Sprinkle over the pasta. Bake at 350 for 35 to 40 minutes or until golden brown. Serves 6 Big Taste of Little Rock
