Ingredients For fettuccine and spinach

  • 8 oz
    fettuccine, cooked and drained
  • 10 oz
    frozen spinach, chopped
  • 1 clove
    garlic, finely chopped
  • 1/4 c
    olive oil
  • 1/2 c
    chicken or vegetable broth
  • 1 tsp
    dried basil
  • 1 c
    cottage cheese
  • 1/2 tsp
    salt
  • 1/4 c
    grated parmesan or romano
  • 1 Tbsp
    chopped parsley

How To Make fettuccine and spinach

    In a large skillet, cook spinach in oil for 5 minutes, stirring frequently, add garlic and cook another minute.

    Add broth, basil, cottage cheese and salt. Stir over low heat until blended.

    Toss spinach mixture, grated cheese and noodles together. Garnish with parsley and serve.
