This recipe is or rather was a favorite of my children way back when....it was a good way to get vegetables into my girls....

Ingredients For zucchini rice casserole

6-8 czucchini
-
1onion ...chopped
-
1 1/2- 2 lbhamburger

1/2 tspgarlic powder
-
1 tsporegano
-
1 ccream of mushroom soup

1 1/4 cinstant rice
-
2 ccottage cheese
-
1 cgrated sharp cheddar cheese
How To Make zucchini rice casserole

1cook zucchini until just tender...drain saute meat..onion..garic powder oregano ..salt..rice.. mix meat mixture with the condensed soup... layer in 9x13 pan with zucchini...meat mixture...cottage cheese..cheddar cheese repeat 2nd layer....Bake at 350 for 45 to 50 min

2Added note...you can also layer rice by itself after the meat mixture...it works both ways....
