erwin's vegetable paella

My brother,who is a vegetarian asked me for suggestions for him to make New Year's. I sent him this recipe although I had never tried it. He made it and said it was wonderful, he is a wonderful cook and although I am not a vegetarian,he and I have similar tastes. My brother said he used fresh artichokes, steamed them himself just till tender,then added to the dish,the original recipe used frozen artichokes. He used frozen green peas.

Ingredients For erwin's vegetable paella

  • 1/4 c olive oil
  • 5 cloves garlic,minced
  • 1 large onion,chopped
  • black pepper,to taste
  • 4 c vegetable broth
  • 2 c arborio rice
  • 4 medium tomatoes,peeled,seeded and chopped
  • 1 small red bell pepper,seeded, cut in thin strips
  • 1 small green bell pepper,seeded,cut in thin strips
  • 1 small yellow bell pepper,seeded,cut in thin strips
  • 1 c green peas
  • 2 c artichoke hearts,quartered
  • 1 lemon
  • lemon wedges

How To Make erwin's vegetable paella

    Heat the olive oil in a paella pan and saute the onion and garlic until the onion is soft. Season with black pepper. Heat the broth in a separate saucepan until simmering. Pour the rice into the paella pan and saute for about 3 minutes. Add the bell peppers and tomatoes and cook for 3 minutes. Add the simmering vegetable broth and cook over medium heat for 20 minutes or until almost all the liquid has been absorbed. Stir in the peas. Sprinkle the artichoke hearts with a few drops of lemon juice, arrange over the rice . Continue cooking until the liquid has been absorbed and the rice is tender. Serve the paella from the pan, with lemon wedges
