A nice fulfilling meal that is easy and tasty. You can add a pinch of hot pepper flakes if desired. Fresh peas are a bonus, but frozen will do. Do not use canned peas.

Ingredients For rush hour pasta and peas

  • 3 Tbsp
    olive oil
  • 2 clove
    garlic, finely chopped
  • 3
    ripe tomatoes, coarsely chopped
  • 2 stalk
    celery, finely chopped
  • 1 c
    fresh or frozen petite peas
  • 8 oz
    your choice of pasta
  • freshly grated parmesan cheese
  • 1 Tbsp
    chopped fresh parsley

How To Make rush hour pasta and peas

  • 1
    Heat the olive oil in skillet over medium heat. Add the garlic and saute until tender--do not brown.

    Add tomatoes, celery and peas. Cook 5 minutes, stirring occasionally.

    Serve over hot pasta, sprinkled with Parmesan cheese and garnished with parsley.
