Another one of Miss Arlene's wonderful Cajun delights. Takes me back to the Louisiana coast. You'll need a rice cooker for this one!

Ingredients For miss arlene's shrimp opelousas

  • 2 can
    beef broth (campbells 10.5 oz).
  • 3 can
    rice (long grain and washed)
  • 1 lb
    butter
  • 1
    onion chopped
  • 1
    bell pepper chopped
  • 1 pkg
    shallots or green onions chopped
  • 1 1/2 c
    smoked sausage (hillshire) diced
  • 1 qt
    medium shrimp (raw)
  • 2 Tbsp
    creole seasoning (tony chachere etc.)

How To Make miss arlene's shrimp opelousas

  • 1
    Mix everything together and pour into a 5 qt rice cooker. Turn on and let it cook until done about 20-25 min or so. Good served with stir fried okra.
