Ingredients For lamb chops supreme

    lamb arm or sirloin chops 1/2 to 3/4 inch thick
  • 10 1/2 oz
    can condensed consomme
  • 1/2 c
    chopped celery
  • 1/2 c
    sliced green onion
  • 1/2 tsp
    dried thyme, crushed
  • 3 oz
    can broiled chopped mushrooms
  • 3 Tbsp
    all purpose flour
  • 1 Tbsp
    dried parsley flakes
  • 2 Tbsp
    shortening
  • salt and pepper to taste

How To Make lamb chops supreme

    In a large skillet, slowly brown chops in small amount hot shortening; sprinkle with salt and pepper. Drain off fat.

    Add consomme, celery, green onions, and thyme. Cover; simmer 40 to 45 minutes, or till meat is tender.

    Stack chops to one side. Drain mushrooms, reserving the liquid. Stir and blend mushroom liquid into flour.

    Gradually stir flour mixture into consomme in skillet; cook and stir till thickened and bubbly. Add drained mushrooms and parsley; heat through. Pour gravy mixture over meat.
