Ingredients For fried eggplant

eggplant, peeled and sliced

seasoned flour

egg wash
-
vegetable oil
How To Make fried eggplant

1peel eggplant and slice 1/8 to 1/2 inch thick
-
2season flour with salt and pepper
-
3crack eggs and season with salt, pepper, dried oregano, parsley and parmigiano cheese
-
4whisk to combine
-
5take peeled eggplant, dredge in flour and shake off excess
-
6place in egg wash , wipe off excess on side of bowl
-
7Fry in hot oil till golden
-
8drain on paper towel
-
9may be frozen and used later for salad, rollatini or parmigiano
