This is a very quick and easy main dish. Serve this with a side of White Navy Beans or Reds Kidney Beans. This is a good meal anytime.

Ingredients For easy jambalaya

  • 1 lb
    package of smoked sausage (cut into 1" slices)
  • 1 md
    chopped onion
  • 1/3 c
    green pepper, chopped
  • 1-15 oz. can
    of diced tomatoes, drained
  • 1-8 oz. pkg
    of convienent jambalaya rice mix
  • salt and pepper to taste

How To Make easy jambalaya

  • 1
    Brown 1" sausage slices in a skillet. In a 2 1/2 quart sauce pan, prepare the rice mix according to the box directions. After simmering for 10 minutes, add the chopped onion, chopped bell pepper, browned sausage slices, and drained tomatoes. Cook for another 20 minutes, or until the water is absorbed. Remove from the heat and let stand for 5 minutes. Fluff with a fork before serving. Salt and pepper to taste if desired.
