This is a great recipe for any special occasion... This happens to be my favorite Easter or Mother's Day meal. Cornish hens are intimidating to some people... but they need not be! This is a very easy way to prepare them... and they taste great too! *** I like to make a stuffing/dressing, mashed potatoes & gravy, frozen peas and cranberry sauce. What a festive - comfort foods meal !!! *** Instead of making a big pie, I like to make mini individual pies for dessert... I usually make two or more kinds of pies. *** Many of us have our "family traditions", many of us just "wing it", how ever your family does things.... Bless You All... and enjoy trying this meal... *** This is not my photo... but one from the internet... this is how stuffed Cornish hens look.
