Ingredients For cheesy tomato bake

  • 8 md
    slices bread, crusts removed
  • 4 md
    tomatoes, sliced
  • 4 oz
    cheddar cheese, grated
  • 1 c
    low-fat milk
  • 4 md
    eggs
  • 2 Tbsp
    pesto
  • sea salt to taste
  • freshly ground black pepper to taste

How To Make cheesy tomato bake

  • 1
    Slice the bread slices in half diagonally and place them in an ovenproof dish (9x13"). Place the tomato slices between the bread slices. Sprinkle the cheddar cheese on top.

    In a medium bowl, mix together the milk, eggs, pesto, salt and pepper. Pour the mixture over the bread mixture and let it rest for 5-10 minutes.

    In the center of a preheated 400º oven, bake for 20 minutes or until golden on top. Serve while hot.
