I think I got this recipe from Mr Food, it's super good and a wonderful diversion from pasta. Kinda like gnocchi but without the potatoes. Wow your family and guest...make some today!!!!!!!!

Ingredients For cheese dumplings, italian style

  • 15 oz
    whole milk ricotta cheese
  • 2
    eggs, lightly beaten
  • 1
    egg yolk, lightly beaten
  • 3/4 c
    grated parmesan cheese
  • 3/4 tsp
    salt, divided
  • 1/2 tsp
    black pepper, divided
  • 1 c
    all purpose flour, plus a little for dusting
  • 1 stick
    unsalted butter
  • 1 Tbsp
    chopped fresh parsley
  • 2 clove
    garlic minced

How To Make cheese dumplings, italian style

    In a large bowl combine ricotta, eggs, egg yolk, Parmesan cheese, 1/2 tsp salt, and 1/4 tsp pepper; mix well. Add 1cup flour, and stir just to combine and mixture forms a ball. (Mixture will be soft).

    Dust baking sheets with flour, drop a half tsp or so of dough onto baking sheet in an oval shape. Replete will the remaining dough, (should make approximately 60) Lightly dust with flour.

    In a large pot of boiling salted water drop about 15 dough balls, when they rise to the top, cook another 4mib and remove using a slotted spoon. Replete till all remaining dough balls are cooked.

    In a large skillet over medium heat melt butter, add dumplings, parsley, garlic and remaining salt and pepper. Cook 5-6 min or until dumplings start to brown, stirring occasionally. Serve immediately with a little extra Parmesan cheese and or with a lite marinara sauce.
