black bean oatmeal burgers

These burgers are so yummy and packed with lots of fiber! I add extra chopped garlic but it can be adjusted to taste.

Ingredients For black bean oatmeal burgers

  • 1 can
    15 oz black beans, drained
  • 1 can
    14.5 oz diced tomatoes, drained
  • 4-6 clove
    garlic, minced
  • 1 tsp
    ground cumin
  • 1/2 tsp
    salt
  • 1/2 tsp
    coursely ground pepper
  • 1 sm
    onion, chopped or 2 green onions, chopped
  • 2/3 c
    chopped carrots
  • 1 3/4 c
    rolled oats

How To Make black bean oatmeal burgers

    Preheat oven to 400F. Line a baking sheet with parchment paper and brush lightly with oil.

    Process the first 8 ingredients until blended. Transfer to a bowl and mix in the oats.

    Form into 8 patties and place on baking sheet. Bake for 10-15 min until firm to the touch. Carefully turn patties over with a wide spatula and place under the broiler for 1-2 min until browned.
