cheesy, spicy black bean quesadillas

I made these one night when I was hungry, but didn't feel like eating meat at all. So I looked for some ingredients and figured I would fool around w/ what I had and this is what I made. Very filling! I topped mine w/ light sour cream.

Ingredients For cheesy, spicy black bean quesadillas

  • 1 tsp
    canola oil
  • 1-1/2 Tbsp
    finely chopped onion
  • 1/2
    can, from a 15.5 oz can black beans rinsed, drained
  • 1/2
    of a 10 oz can whole kernel corn, drained
  • 1-1/2 Tbsp
    light brown sugar
  • 1/4
    or more to your liking, spicy salsa
  • 1/4 tsp
    hot red pepper flakes
  • 2 Tbsp
    butter, divided
  • 4
    8" tortillas
  • 1 c
    reduced-fat, shredded mexican-style cheese
  • light sour cream and extra salsa for garnish

How To Make cheesy, spicy black bean quesadillas

    Heat oil in lg saucepan, over medium heat. Add onion to pot. Cook until soft. Stir in beans and corn. Add brown sugar, salsa and red pepper flakes.

    Cook 3 mins, or until heated through. Melt 2 tsp butter in lg skillet, over medium heat. Place 1 tortilla in skillet. Sprinkle evenly w/ cheese, top w/ some of the bean mix. Place another tortilla on top of bean mix in skillet. Cook until golden.

    Flip tortilla over and cook other side until golden. Place cooked tortilla on a plate. Melt more butter and repeat w/ remaining ingredients. Serve tortillas w/ extra salsa and sour cream.
