Ingredients For rabbit in tomato sauce

  • 1 lg
    rabbit, cut into parts
  • 1 can
    ( 15 oz) tomato sauce
  • 1 md
    onion, chopped
  • 4 slice
    bacon , chopped or 1/4 cup bacon drippings
  • 4 md
    carrots, sliced
  • 1 sm
    can peas
  • 1 c
    red or white wine
  • 1 c
    flour, seasoned
  • oil for frying
  • 2 clove
    garlic, diced
  • parsley
  • 1
    chicken cube
  • bay leaves

How To Make rabbit in tomato sauce

    Marinate rabbit parts in wine. Leave for 1 hour.

    Roll rabbit in seasoned flour and fry in hot oil, until browned on all sides. Remove from pan.

    In same pan fry onions, garlic and carrots. Add wine and evaporate. Add tomato sauce.

    Return rabbit parts to pan and simmer till tender, about 1 1/2 hours. Add liver, heart and peas 15 minutes before end of cooking. Keep warm until served.
