8 slicesmoked bacon, partially cooked

1/4 csoy sauce

2 Tbspolive oil

2 tspsnipped fresh thyme

1/4 tspdry mustard

4 tspsteak spice rub

How To Make bacon wrapped bison ribeyes

1Place meat in a resealable plastic bag set in a shallow dish.

2For marinade: Combine soy sauce, olive oil, ketchup, snipped thyme, garlic and dry mustard in a bowl. Pour over meat; seal bag. Marinate in the refrigerator for 2 to 4 hours, turning bag occasionally.

3Drain meat, discarding marinade. Sprinkle 4 teaspoons Spice rub over surface of meat and rub in with your fingers. Wrap the edge of each steak with 2 slices of partially cooked bacon, securing ends with wooden toothpicks.

4Preheat grill. Reduce heat to medium. Place steaks on grill rack over heat and Cover.Allow to cook for 10 minutes, turning the steaks half way through.

5If you like, garnish steaks with a thyme or oregano sprig. Serve with fried croquettes and steak sauce.
