Ingredients For fiesta skillet supper

1 lblean ground turkey breast

1/2 csun dried tomatoes, snipped into quarters

2 ctomato juice
-
2 cquick-cooking rice, uncooked

1 can(11 oz) whole kernel corn with green and red peppers, undrained

3/4 cwater
-
1 pkg(1 1/4 oz) taco seasoning mix

1/2 c(2 oz) shredded cheddar cheese
-
1/2 ccrushed corn chips
How To Make fiesta skillet supper

1Heat large nonstick skillet over medium-high heat until hot. Add turkey and tomatoes. Cook, stirring, 5 to 6 minutes or until turkey is no longer pink.

2Add tomato juice, rice, corn, water and taco seasoning. Stir until all rice is moistened and seasoning is blended into mixture. Bring to a boil; remove from heat.

3Top with cheese, cover and allow to stand 5 to 6 minutes or until liquid is absorbed and cheese is melted. Top with corn chips before serving.
