I wanted something healthy and found this at Washington State Dept of Health. Quick and so simple you won't believe how good this is.

Ingredients For scallop kabobs

1 1/2 lbfresh bay scallops.

3medium green peppers, cut into 1 1/2 inch squares.

1 ptcherry tomatoes.

1/4 cdry white wine.
-
1/4 cvegetable oil.

3 Tbsplemon juice.
-
dashgarlic powder.
-
black pepper, to taste.
How To Make scallop kabobs

1Parboil (partially cook by boiling) green peppers for 2 minutes

2Alternately thread peppers, scallops, and tomatoes on skewers.

3Combine next five ingredients.

4Brush kabobs with wine/oil/lemon mixture, place on grill (or under broiler).

5Grill 15 minutes, turning and basting frequently.
