  • 1 - 1 1/2 lb
    scallops
  • 1 tsp
    salt
  • 1/2 tsp
    pepper
  • 1/2 c
    onion, chopped
  • 1 1/2 c
    celery, chopped
  • 1/2 lb
    fresh mushrooms
  • 1 c
    chopped, green pepper
  • 7 Tbsp
    butter
  • 1/4 c
    flour
  • 1 tsp
    salt
  • 1/8 tsp
    nutmeg
  • 2 c
    milk
  • 1/4 c
    sharp cheddar cheese, grated
  • 1 c
    bread crumbs

How To Make scallop casserole supreme

    Sprinkle scallops with salt & pepper. In 2 tablespoons of butter, cook vegetables until tender. In a separate skillet, make cream sauce by melting 4 tablespoons butter, add flour and cook for 1 minute or 2 stirring constantly. Add milk, nutmeg and salt and cook until thickened.

    Preheat oven to 375 degree F. Combine scallops, cream sauce and sauteed vegetables. Grease a 1 1/2 quart casserole and add the scallop mixture, spreading evenly. Melt remaining butter and combine with bread crumbs, mix in cheddar cheese. Sprinkle evenly over scallops and bake for 25 - 30 minutes, or until golden.
