Ingredients For new england lobster rolls

    lobster/1&1/2 pound
  • 4 md
    split top hot dog buns
  • 1 Tbsp
    salt/divided
  • 1 1/2 tsp
    lemon juice, fresh
  • 1 pinch
    cayenne pepper
  • 2 Tbsp
    minced celery
  • 2 Tbsp
    mayonnaise/use the good stuff!
  • 2 Tbsp
    butter, room temperature/unsalted
  • 4 lg
    boston lettuce leaves

    In a large enough pot to boil the lobster,fill to three quarters with water,add the lemon that you squeezed for the juice for the recipe,a few black pepper corns,a couple of bay leaves and half of the salt.

    Bring to a rapid boil,submerge the lobster and cook for ten minutes or so. Remove and let cool. Crack and remove all of the meat from the tail,claws etc.

    Dice the meat into good sized pieces. Add the mayo,celery,the remainder of salt,pinch of cayenne pepper,lemon juice and toss well to coat

    Butter and salt both flat sides of the hot dog rolls and brown each side in a non stick pan. Line each roll with the Boston lettuce leaves,fill each roll generously with the lobster salad,plate and enjoy!! I served mine with my creamy coleslaw and some fresh dill pickles that had jarred earlier in the month! Deelish!!! :)
