I just love Reuben sandwiches and nothing taste better than a homemade one. See my other recipes for a good recipe for Thousand Island dressing. When I made a meal I like everything possible to me totally homemade!

This Reuben sandwich recipe is very hearty. When you take one bite of the buttery grilled rye bread, the hot sliced corned beef with melted cheese, tangy sauerkraut, and Thousand Island dressing, you're in sandwich heaven. Pick up sliced corned beef from the deli or use homemade St. Patrick's Day corned beef. Either way, this recipe for the best Reuben sandwich is a winner.

Ingredients For best reuben sandwich

  • 1 1/2 lb
    thinly sliced corned beef
  • 8 slice
    Swiss cheese
  • 1 jar
    sauerkraut
  • 8 slice
    dark rye bread or marbled rye bread
  • 1 c
    Thousand Island dressing
  • 6 Tbsp
    butter, melted

How To Make best reuben sandwich

  • Brisket in a slow cooker.

    If preparing your own corned beef, you will want to slow cook a 3 pound flat cut corned brisket on high for about 6 hours.
  • Adding beer to the slow cooker.

    Add a dark stout beer; one bottle will be more than enough. It gives your corned beef a wonderful flavor.
  • Cooked brisket ready to be sliced.

    If you cook your own corned beef you will want to completely chill it so you can slice it thin. I cook my corned beef a couple days before I plan on using it.
  • Corned beef sliced into thin slices.

    Slice the corned beef into thin slices.
  • Heating up the corned beef slices.

    Grill or heat up your corned beef before assembling the sandwiches.
  • Brushing the bread with melted butter.

    To assemble the Rueben, lay out the rye bread and brush one side of each slice with butter.
  • Spreading Thousand Island dressing onto the bread.

    Turn over bread and spread both pieces of the bread with a layer of Thousand Island dressing.
  • Swiss cheese laid onto the bread.

    Lay a piece of Swiss cheese on each piece of bread.
  • Adding meat to the sandwich.

    Then put desired amount of corned beef on one of the slices of bread.
  • Adding sauerkraut to the sandwich.

    Followed by about 1/3 to 1/2 cup sauerkraut.
  • Adding the second slice of bread and grilling the sandwich.

    Put the other slice of bread and cheese on top and grill until golden brown on either side.
  • Flipping the sandwich while grilling.

    Be very careful not to overcook. You don't want to burn your sandwich.
