This was the perfect meal for a cool, Fall day... I had a pork loin roast, apple cider, a small butternut squash, some leeks needing used, so this quite delicious & satisfying meal was what came of it all...My whole family loved it...the meat was fork tender and flavors were just wonderful. I hope you'll try it sometime! Enjoy!

Ingredients For savory ~ apple cider baked pork pot ~

  • 1/4 - 1/2 c
    vegetable oil
  • flour for dredging pork
  • 3 lb
    pork loin, fat removed & cubed
  • 1 sm
    butternut squash - peeled, seeded - cut into and cut each half into - then slice into 1/4 inch thick slices- (or can add carrots)
  • 2
    leeks- chopped
  • 1
    onion- chopped
  • 2 clove
    garlic,minced
  • 1 Tbsp
    each - pepper & dried rosemary
  • 2 tsp
    kosher salt
  • 3 c
    apple cider

How To Make savory ~ apple cider baked pork pot ~

    Trim & cube your pork.

    Peel and slice squash.

    Chop leeks and onion.
  • 4
    Preheat oven to 325 degree F. Now, dredge pork in flour. In a large skillet over med high heat, add oil. Once hot place flour coated pork into pan, don't overcrowd - if you have to brown it in 2 batches. Brown on all sides.

    Place browned pork in an oven safe pan or casserole. I used a 6 quart dutch oven.

    Once pork is all browned and in baking dish, add the squash or carrots, onion, leeks, salt, pepper, garlic and rosemary evenly over the pork.

    In the pan that your browned the pork, add the apple cider. Scraping the bits of goodies from the bottom of the pan. Bring to a boil, then pour cider over the veggies and pork.

    Cover the pot with a lid or foil and bake for 2 hours or until liquid has reduced ( gravy consistency) or pork is fork tender. I stir once through baking process.

    Serve over rice or noodles - even mashed potatoes. Sprinkle with salt & pepper if desired...we use red pepper flakes as well...
