This is one of "our" earliest recipes. It's elegance, ease of prep, and earthy flavors made it an instant favorite in our house. We found it in the Most Expensive Cookbook in the World (Great American Recipes card set).

Ingredients For sausage cacciatore

8italian or pork sausages

2 Tbspoil

1 mdonion, chopped

1green or red pepper, chopped

2 lgsprigs parsley, chopped

15 oztomato sauce
-
1/2 cwhite wine, optional

1 lgclove garlic, minced

1 tspdried oregano leaves

1bay leaf

salt and pepper, to taste
How To Make sausage cacciatore

1Heat the oil in a large skillet. When the oil is hot, brown the sausage all around. Remove sausage and set aside.

2Add the onion and green pepper to the pan and saute for 3 minutes.

3Add tomato sauce, white wine, garlic, parsley, oregano and bay leaf. Stir to mix well. Place sausage in pan. Stir to mix well again. Cover.

4Simmer over low heat for about 30 minutes or until the sausages are cooked.

5Salt and pepper to taste.
