Making egg salad is practically effortless and requires very few ingredients. The most difficult part is mastering the art of a perfect hard boiled egg! Mayonnaise and Dijon mustard, which many of us have on hand at all times, mixed up with the cooled diced hard boiled eggs is the modest base. Sprinkle with a bit of salt and pepper, and you have a simple egg salad on hand. The addition of meat to your egg salad is another option. I’ve found that many recipes call for adding bacon, but it occurred to me – why not smoked ham?

Ingredients For ham and egg salad sandwich

  • 1/2 c
    (3.5 ounce) fully cooked smoked ham, chopped
  • 1/2 c
    broccoli florets, chopped
  • 1/2 c
    celery, chopped (1 stalk)
  • 2
    hard cooked eggs, chopped
  • 1/2 c
    mayonnaise
  • 1 Tbsp
    fresh chives, chopped
  • 3/4 tsp
    dried marjoram leaves
  • 1/8 tsp
    freshly ground black pepper
  • 1/8 tsp
    salt
  • 8 slice
    whole grain bread

How To Make ham and egg salad sandwich

    In a medium bowl combine ham, broccoli, celery, eggs, mayonnaise, chives, marjoram, pepper and salt. Mix well.

    Refrigerate for 1 hour or more to blend flavors. Serve on whole grain bread.
