One of my all-time favorite cooking magazine publisher's is Reimann Publishing -- they make Taste of Home. They used to have a magazine, Quick Cooking, where we found this recipe. And it is quick. And delicious. And it works really well for a party!

Ingredients For breakfast burritos

  • 1 lb
    pork sausage
  • 1 sm
    onion, chopped
  • 1/2
    green pepper, chopped
  • 7 oz
    mushrooms, drained
  • 8
    flour tortillas (7"), warmed
  • 6
    eggs, beat
  • 1 c
    cheddar
  • queso sauce, optional
  • salsa, optional

How To Make breakfast burritos

    In a skillet, brown sausage. Drain, discarding all but 2 tbsp drippings. Add onion, green pepper, and mushrooms; saute until tender. Meanwhile, in another skillet or in the microwave, scramble the eggs. Place an equal amount of sausage mixture on each tortilla; cover with an equal amount of eggs, and 2 tbsp of cheese and/or queso sauce, to taste. Fold bottom of tortilla over filling and roll up. Serve with salsa if desired.

    I tried rolling the tortilla up from the bottom – it fell apart. When I did the leftovers, I didn't roll the bottom up. Instead, I just folded it up, toothpicked it twice, and plastic wrapped it. When I heated it up (one minute on high), I found that the melted cheese cemented it together, and I had a mess-free breakfast with a fork and plate!
