I love macaroni and cheese and this is a tasty (and quick) variation.

Ingredients For salsa mac & cheese

  • 2 c
    milk
  • 4 Tbsp
    butter or margarine
  • 1/4 c
    all purpose flour
  • 2 c
    chunky-style salsa
  • 1 1/2 tsp
    salt
  • 3 c
    mexican cheese blend, shredded
  • 1 lb
    pasta (elbow macaroni, corkscrew or rotini) cooked, drained and warm
  • 1/4 c
    cilantro, fresh, chopped

How To Make salsa mac & cheese

  • 1
    Warm milk (skim, 2%, or whole) in small saucepan over medium heat.

    Melt butter in medium saucepan over medium heat. Stir in flour and whisk 2 minutes until mixture becomes golden.

    Add warmed milk; continue to whisk until mixture thickens and comes to a full boil. Stir in salsa and salt; remove from heat.
  • 4
    Stir in cheese until melted; pour sauce over the pasta and spoon into serving dish. Sprinkle with cilantro and serve.
