My family and I LOVE Mexican food! This is something just a bit different, and removing the bread (tortillas) from the equation. ( I use the whole wheat pasta, to make it even healthier!) Quick & easy, this is one I fix on a particularly busy night!

Ingredients For mexican twist

1 lbground beef, lean

1large onion, chopped

4 cwater
-
1 canwhole kernel corn, drained

1 candiced tomatoes, undrained

2 pkgdry taco seasoning mix

8 ozspiral pasta
How To Make mexican twist

1In a 6-quart soup pot, over high heat, brown ground beef and onion 8-10 minutes, until no pink remains in beef and onion is tender.

2Add remaining ingredients except pasta; mix well and bring to a boil.

3Once at a boil, stir in pasta. Reduce heat to low, cover, and simmer 15-18 minutes, or until pasta is tender.
