My family and I LOVE Mexican food! This is something just a bit different, and removing the bread (tortillas) from the equation. ( I use the whole wheat pasta, to make it even healthier!) Quick & easy, this is one I fix on a particularly busy night!

Ingredients For mexican twist

  • 1 lb
    ground beef, lean
  • 1
    large onion, chopped
  • 4 c
    water
  • 1 can
    whole kernel corn, drained
  • 1 can
    diced tomatoes, undrained
  • 2 pkg
    dry taco seasoning mix
  • 8 oz
    spiral pasta

How To Make mexican twist

    In a 6-quart soup pot, over high heat, brown ground beef and onion 8-10 minutes, until no pink remains in beef and onion is tender.

    Add remaining ingredients except pasta; mix well and bring to a boil.

    Once at a boil, stir in pasta. Reduce heat to low, cover, and simmer 15-18 minutes, or until pasta is tender.
