Ingredients For cold sesame noodles with summer vegetables

  • 1/3 c
    rice vinegar, unseasoned
  • 1/3 c
    vegetable oil
  • 1 Tbsp
    sriracha sauce
  • 1 Tbsp
    toasted sesame oil
  • 8 c
    summer vegetables, cut into matchsticks (cucumber, carrots, radishes, bell peppers, etc)
  • 8 oz
    soba noodles, may sub vermicelli if you can't get soba noodles
  • 1 c
    cilantro leaves and tender parts of stems, loosely packed
  • 3
    scallions, thinly sliced
  • 1 Tbsp
    sesame seeds, black or toasted white, your choice

How To Make cold sesame noodles with summer vegetables

  • 1
    Whisk the first four ingredients in a large bowl. Add the vegetables; toss to coat. Season with salt and pepper.

    Cook noodles in a large pot of boiling salted water, stirring occasionally, until al dente; drain. Run noodles under cold water to cool them; drain well and add to the bowl with the vegetables.

    Add cilantro and scallions; season to taste with salt and pepper. Sprinkle sesame seeds over and serve.
