easy fried rice

Turn leftovers into a meal! Perfect for using up leftover rice. You can also use leftover chicken (or rotisserie chicken), pork or beef. It's perfect if you had Chinese food and don't know what to do with all the rice that is left over. I prefer brown rice, which is listed in the recipe, but you can use white. Note: It is important to use chilled rice. If you use warm/hot rice, the result will be mushy.

Ingredients For easy fried rice

  • 3 Tbsp
    vegetable oil, divided
  • 2 lg
    eggs, lightly beaten
  • 1 c
    frozen peas, thawed
  • 2 clove
    garlic, minced
  • 4 c
    brown rice, cooked
  • 2 c
    shredded or thinly sliced cooked chicken, pork or beef
  • 3 Tbsp
    soy sauce, low-sodium
  • 3 Tbsp
    oyster sauce
  • 1 c
    bean sprouts
  • 5
    scallions, slice thin

How To Make easy fried rice

    Heat 1 1/2 t. of the oil in a large non-stick skillet over medium heat. Add the eggs and cook, without stirring, until the just starting to set, about 20 seconds. Continue to cook the eggs, stirring constantly now, until they are cooked through but not browned, about 1 minute. Transfer to a small bowl.

    Add the remaining 2 1/2 T of oil to the same skillet and return to high heat. Add the peas and garlic and cooke for about 30 seconds.

    Add the rice (it is important to use cold rice. If you use rice that is warm or hot, your rice dish will be mushy), meat, soy sauce and oyster sauce and cook, stirring, for about 3 minutes.

    Add the sprouts, scallions and reserved cooked eggs and cook until it is all heated through, about 1 more minute. Enjoy!
