We love good fried catfish and probably everybody has their way of frying fish. This is how I do it. Nothing fancy, but it sure tastes good. Hope you like it.

Ingredients For fried catfish

  • 1 c
    all purpose flour
  • 1/2 c
    yellow cornmeal
  • 1/2 c
    white cornmeal
  • 1/2 tsp
    paprika
  • 1 1/2 tsp
    salt, divided
  • 1/4 tsp
    onion powder
  • 1/4 tsp
    cayenne pepper
  • 1/2 tsp
    garlic powder
  • 1/4 tsp
    black pepper
  • 2 c
    vegetable oil
  • 1/2 c
    milk
  • 2 lg
    eggs
  • 6
    8 oz. catfish fillets

How To Make fried catfish

    Combine the flour with the paprika, 1/2 tsp of the salt, the garlic powder, black pepper, onion powder and cayenne pepper.

    In a separate shallow dish, mix eggs, milk and the remaining tsp of salt.

    In another dish, combine the two cornmeals.
  • 4
    Dredge each catfish fillet in the flour mixture first, then the egg mixture, then the cornmeal mixture last.

    Heat oil in a deep skillet and fry 3 fillets until golden brown on one side (about 5 minutes). Turn fish over and fry on the other side about 5 minutes until golden brown and flake tender. Remove and drain on paper towels. Add remaining 3 fillets and fry.
