The recipe uses mostly canned, pre-made or left-over ingredients, so it's easy and quick to make. So I particularly like it on those days when I'm really hungry but have so little time to cook a full meal.

Ingredients For quick chicken fajita wrap

    10-inch tortilla (i prefer flour tortillas, but any will work)
  • 1/2 c
    cooked chicken breast, cut into bite-size pieces
  • 1-2 Tbsp
    low-fat sour cream
  • 2 Tbsp
    salsa (mild or hot - your choice)
  • 1 1/ oz
    mexican-blend cheese, grated
  • 1 Tbsp
    cilantro, coarsely chopped
  • 1 Tbsp
    green onion, chopped
  • 1
    avocado slice (optional)

How To Make quick chicken fajita wrap

    Warm the tortilla in a skillet (or in a warm oven), if you prefer.

    Place chicken, sour cream, salsa and cheese on tortilla. Add avocado slice, if using. Sprinkle cilantro and sliced green onion on top.

    Roll up the tortilla, and serve. I usually make a single wrap, for a light lunch for myself. But you cut the wrap into 4 or more pieces, and it would make a nice appetizer for a Mexican-themed party.
